YIELD: 3 servings
 

FOR THE DRESSING

2 teaspoons EVOO
3 tablespoons reduced-sodium tamari or soy sauce
3 tablespoons rice wine vinegar
3 toasted nori sheets, finely chopped
Juice of 1 large orange or tangerine
3 teaspoons finely grated ginger
Dash of hot sauce
Freshly ground black pepper
 

FOR THE BOWL

1 8-ounce package tempeh, sliced thinly
11/2 cups cooked brown rice
1/2 cup sliced radishes
1 ripe avocado, sliced
2 large carrots, spiralized or cut into ribbons
1/2 English cucumber, sliced thinly or spiralized
2 small cooked beets, cut into wedges
3 tablespoons toasted sesame seeds
 

DIRECTIONS

Turn on the oven broiler.
Whisk all dressing ingredients until well-combined; adjust the seasoning and set aside.
Brush the tempeh with half of the dressing and let marinate while you prepare your vegetables.
Arrange tempeh in a single layer on a baking sheet and generously brush with some dressing on both sides.
Broil for about 3 minutes per side, flipping once and brushing with extra dressing.
Alternatively, cook the tempeh on high heat in a nonstick pan for 3 minutes per side.
Transfer to a plate and set aside.
Mix 2 to 3 tablespoons of the dressing into the rice and divide among three serving bowls.
Arrange baked tempeh and the other ingredients on top, drizzle with the remaining dressing, and sprinkle with sesame seeds.
Serve immediately.
 
Recipe Note: You can substitute the rice with riced vegetables, such as cauliflower, daikon radish, or jicama.
