Serves 4

Ingredients 

4 (6-ounce) skin-on salmon or arctic char fillets
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed or olive oil
1 garlic clove, minced
1 medium shallot, minced
2 (12-ounce) jars marinated artichoke hearts
1 (6-ounce) can pitted green manzanilla olives, drained
Finely grated zest and juice of 1 lemon
½ cup fish or vegetable broth
1 cup fresh spinach or sorrel
Chopped fresh parsley or cilantro      

 

Directions

1. Heat a large skillet over medium heat for about 3 minutes. While the pan heats, pat the salmon dry with paper towels and season the skin with salt and pepper.

2. Heat the oil in the skillet until hot and shimmering, then add the salmon, skin-side down, and gently press the fish with a fish spatula for about 10 seconds to make sure the skin makes even contact with the hot pan. Cook the salmon until the skin is golden brown and super crispy to the touch, 4 to 6 minutes. Transfer the salmon, skin side up, to a plate.

3. Add the garlic and shallot to the pan and sauté until translucent, 1 to 2 minutes. Add the artichokes and their liquid along with the olives. Cook until warmed through, about 3 minutes. Add the lemon zest and juice and the broth to the pan and bring to a simmer, about 1 minute, scraping up any browned bits from the bottom of the pan. Stir in the spinach, then nestle the salmon in the sauce, skin side up, and cook for 2 to 3 more minutes for medium/ medium-rare, or until done to your liking. Remove the pan from the heat. Garnish with the parsley and serve.
